This morning, we woke up to a charming little rainbow over the city and decided to walk to Rainbow Drive-In for lunch. Sharing a mixed plate and a pork cutlet plate was such a treat – delicious and so satisfying.

Later, we strolled over to Waikiki and watched the kids riding waves on their boogie boards. Our flight back to Maui was in the afternoon, so our time on Oahu was short but sweet. Oh, and I’m still feeling sore from the massage we had earlier – definitely a sign it was amazing!

Mariko and I started a mini work-cation on Maui today, while my mom, brother, and sister-in-law started their vacation. It’s beautiful here.

For our first meal, we picked up some Ichiban Okazuya. We had Korean chicken, teriyaki beef, mahi mahi, and pork katsu plates. Everything was so tasty and filling. It’s actually enough for another meal! Oishikatta

Our second signature family holiday meal is a Hawaiian feast. This year we enjoyed kalua pig, lau lau, lomi salmon, chicken long rice (not pictured), musubi, and poi. New this year were some sweet bread rolls, and Chinese greens with spicy tofu. So good!

Will definitely need to run a few extra miles to burn off some of these calories!

Each year on Christmas Eve, we have a Hawaiian feast. It’s usually at my parents’ house in California, but this year we decided not to travel due to the pandemic, so we just had a smaller 4-person version here in Texas. Instead of the usual lau-lau, I made a char-siu-style chicken, and also our staple kalua pig. Kalua pig is really easy and simple to make following this recipe from Foodland, and it turned out perfect! Mariko also made poké and mac salad for a delicious, traditional (to us) Christmas Eve dinner.
