I made Mabo Tofu following the recipe at Just One Cookbook, and it turned out great! Koa said it was yummy and asked how difficult it was to make. I think that means it’s a candidate for his meal prep dishes!
I’ve been enjoying the chili I made the other day by putting it on rice, then topping with cheese and egg. So good.
It’s hard to beat the beautiful purple, pink, and orange colors of the sky.
I made a big pot of chili for Koa and I to eat while Mariko is away on vacation. It’s delicious, but I’m sure we’ll get sick of it pretty soon, though.
