Making Budae-Jjigae / Army Base Stew

Today I made Budae-Jjigae (Army Base Stew) using this video as a guide. It was super-delicious, spicy, and will leave your whole body warmed up. It’s also very easy to make (hey, if I can do it, anyone can!)

In the photo below, you can see it with the spicy paste mixed into the broth (we just used water), and instant noodles added. We cook it on our kitchen stove, and then bring it over to the table and use a portable gas stove on low to keep it nice and hot. I highly recommend this yummy Korean dish!

Enchilada Cat

Not TacoCat. Anko had to check out our enchilada dinner tonight which was okay at first, but then she started rubbing up against my shoulder while I was trying to eat which made it a bit more difficult.

Anyways, this time I made two types of enchiladas: ground beef with red sauce, and Oaxaca Rallado cheese with Hatch green sauce. Both were pretty good!

Curry Nite

As mentioned in a previous post, the cooler Autumn weather* means we get to enjoy Autumn food**! Tonight it was a big pot of Japanese Curry, also know as Curry Rice (カレーライス)! A family favorite for sure, especially paired with the perfect side dish: Macaroni Salad. Yummm!

** we actually eat it year-round, but it feels special in Autumn

Autumn Nabe

Although the weather here is still warm, the feeling of Autumn has arrived and that means it’s time to eat some cooler-weather food! Nabe is a hotpot type of dish, and today we had a yummy nabe of tofu, chicken meatballs, flat rice noodles, and assorted veggies. It was kind of a “clean out the fridge” meal, but oh-so-good!

The food was hearty and hot – in fact I was sweating a little bit during the meal. 😄
