My youngest son says that Mexican food is his favorite. I have to say, it’s right up there near the top for me as well! But I’d say Japanese and Chinese are above. Maybe Mexican next. Korean could be third, though…
Anyways, we made shrimp tacos tonight. Mariko deep fried the shrimp, Koa and his girlfriend prepped the veggies and did shopping, and I warmed the tortillas. And did the dishes. I enjoy playing the support role in both meal prep and video games!

Today we made some Birria Tacos. Koa had made these before and wanted to eat them again, so he sent me the recipe. I cooked the meat for a few hours, and then we both fried up the tacos. They were pretty good, but took a while to make. Still, it was fun to cook with my son. 😀

Today we went to San Antonio to run an errand and then we decided to have lunch downtown at Mi Tierra. Everything was delicious! The margaritas were great, and the tortillas were superb. The location is at the Historic Market Square and it was fun to browse the shops. I especially liked all the Lotería themed merch. So fun.

I enjoyed another relaxing vacation day with my family doing family stuff. Specifically bowling at Gable House Bowl (my brother bested me by a single point!) and lunch at Mi Burrito.
I had never eaten at Mi Burrito before, so I was excited to try it. My Al Pastor Burrito and Cadillac Margarita hit the spot! The burrito was a little on the salty side, but still delicious and there are so many things on the menu that I’d love to go back and try some different dishes.
The outdoor seating was nice (especially during COVID-times) and we even had a view of the water! It was a little chilly today, but I was happy the sun was shining. A nice lunch for sure. 😀

If you are in San Antonio near the Alamodome and looking for a bite, I highly recommend Con Huevos Tacos. Delicious. And big – Mariko and I ordered two tacos each and we were stuffed! 🌮
