My son simmered the birria all afternoon and the results were delicious! So yummy in the fried tacos, but we’re looking forward to eating the meat in regular tacos and quesadillas. Mmmmm

Sad to report that we had to say good-bye to our Prius today. It was involved in a minor accident, but since it is so old (2008), the cost to repair exceeded the value of the car. So we took the insurance money and said our final farewells. It was such a great car… we put over about 202,000 miles on it, with long trips to California, off-roading in Big Bend, and it also spent a couple years with Bay while he was at school in Houston. I’m a bit sad, but also happy to have owned such an excellent vehicle. Happy trails!

Whenever I visit our local HEB supermarket, I check out the variety of ice creams available. I think the holiday season sees the most variety, and I’m always tempted to buy everything! But restraint was on my mind today, so I just bought our usual Tillamook Mudslide, which is our favorite. 😀

I went for a quick ride around the neighborhood to test out a new camera angle using the Insta360 X3 camera. I really like the angle, but it’s a bit in-the-way for the POV view. Still, I don’t mind it too much. Please enjoy the video!
