Tonight I whipped up another big batch of Spam fried rice and steamed some frozen gyoza and shumai on the side. It turned out to be a quick and satisfying dinner. This time I tossed in some corn and peas, and honestly, it made the fried rice even tastier than before.

Happy National Taco Day! We marked the occasion with a mini taco feast from our local Taco Bell. My favorite is the double-decker taco — a crunchy corn shell tucked inside a soft flour tortilla, held together by refried beans. Whoever came up with that combo deserves an award!

Today’s lineup of non-water drinks was simple but perfect: started with coffee, moved on to tea, and ended the day with a glass of Sauvignon Blanc. Cheers to Friday!

Dinner tonight was Chicken Tikka Masala, straight from Costco. Super tasty, though I kept wishing for more sauce to soak up with rice. I tossed in some hard-boiled eggs for a little more protein. Not pictured is the bowl of sautéed spinach we had to cover our veggie quota. Best part? It’s one of those easy dinners that the kids happily eat. Win!

I’ve always loved saltines, but the Saltidas I tried in CDMX took things to a whole new level. Paired with shrimp and octopus cocktails, they were pure magic. Fast forward to Texas, where I spotted Gamesa Saladitas at a Mexican market and pounced on them like treasure. A couple of hours later, half the box was gone. I might need an intervention, because these things are way too good!

Tonight I went big and made an extra-large batch of Spam Fried Rice. Since we don’t own a giant wok (which would have been ideal), I had to split it up and cook with two pans. The rice ended up a little crispy in spots from overcooking, but the kids still gave it two thumbs up and said it was delicious!
We rounded out the meal with gyoza and broccoli. Gyoza and fried rice are a classic combo, and then the broccoli added the greens.
FYI, we used the Japanese Fried Rice (Yakimeshi) recipe from Just One Cookbook. It’s so easy to substitute a protein, in this case, almost a full container of Spam (cubed).

Tonight’s dinner was a big pot of spaghetti and meatballs, and my plan is to make it last for a few meals. We’ll see how that goes! I’m still deciding what to cook for the kids next, but I’ve got a few ideas swirling around. There’s also been a request for shrimp tacos, so those might be making an appearance soon. Hopefully I can recruit some help with the shrimp when the time comes!
