Mariko is out of town for a few days, so I made a big pot of chili for Koa and I to survive on. This batch turned out pretty good! Our go-to way of eating it is to pour it over white rice, then add cheese, some sour cream, and hot sauce.
In today’s photo, you might notice that I also added an egg. I just needed some diced jalapeños to put the meal over the top. Oh well. It was still excellent. 😄

Tonight we had a sweet and spicy curry for dinner. The “secret” ingredient was Buc-ee’s Candied Jalapeño. It seems like everybody’s curry recipe should have a secret ingredient to make it unique, and I think that is pretty cool.
Mariko always makes our curry for the family, but next time, I’d like to try making it (with her help). That way, I can try to find my own secret ingredient as well as helping out with more meal prep.
Anyways, I’ve taken many curry photos over the years, but the photo below is one style that I don’t usually share. It’s of the second helping which doesn’t look as nice, but probably tastes even better than the first serving. 😊

It’s that time of year in Texas where crawfish boils abound! After a couple of years of no crawfish boils for me due to the pandemic, I have been to two in less than a week.
I needed a bit of an extra boost of caffeine today, so in addition to my regular cup of coffee, I made use of the cup I got in Barcelona and had a nice strong espresso. Yummy!

Hi! Today’s photo is of Mariko teaching a bagel class. As you may know, she’s an amazing cook. But I wanted to share that she has started a new Instagram account, PopoTXKitchen, with quick and easy recipes in English and Japanese.
Please check it out and share! おねがいします!
