Austin to Miami and Jamaican Feast

Today was our travel day from Austin to Miami, where we’ll spend the night before we begin our Caribbean cruise.

Our flight wasn’t too early, and the airport wasn’t crowded at all so the whole flight was stress-free.

Our plane was small, with just four seats per aisle, but it was very comfortable with lots of legroom so the flight seemed to go by in no time, and before we knew it, we were in the Miami humidity!

We were the first of our immediate family to arrive so we got dibs on the amazing feast that was waiting at my cousin’s house (where we would be staying).

Patties, curry goat, fricassee chicken, stew peas, plantain, etc. It was awesome! Everything was from Jamaica Kitchen, the BEST Jamaican food in Miami. My cousin is the owner/operator of Jamaica Kitchen, but even it wasn’t a family-owned restaurant, I’d still rave about it. It’s so delicious!

Later that evening, the rest of my immediate family arrived and we continued the feast. What a wonderful day reuniting with family. Can’t wait for the rest of the trip!

Mezcal Margaritas

こんばんは。How’s it going?

This evening I made enchiladas for dinner, so of course, we had to have margaritas as well. This time we had mezcal margaritas… they were smoky and delicious! Most of the recipes online use 2 parts mezcal, one part lime, and 1/2 Cointreau, but I went with 2 parts lime, 1 part each of mezcal and Cointreau and it was still yummy. I think we’d be knocked out with the other recipe… but maybe we’ll give it a try tonight. 😆

Dinner Party

Mariko had some girlfriends over for dinner which is great because that always means a delicious feast will be had! Included on the menu was a classic pot roast, stuffed lotus root, Hawaiian mac salad, basic chicken, spinach salad with toasted bacon dressing, and a Japanese corn/tuna/mayo pizza.

I’m actually trying to get in shape for an upcoming cruise, but these meals aren’t helping! But it’s a sacrifice I am willing to make. 😆

こんばんは。How’s it going?

Our friends got a new Ooni pizza oven which uses wood pellets so they hosted a pizza brunch to try it out. It worked nicely and many stomachs were filled. 😊 The dough was handmade and we had a few different types of pizza, including a yummy Japanese-style corn/mayo/tuna pizza. It sounds weird, but it’s super yummy!

Bay’s Birthday Dinner – Salmon and Ikura Donburi

For his birthday dinner, Bay requested salmon and ikura donburi, which was a nice surprise. I thought he would want to go out for sushi at a restaurant, but a birthday dinner at home has a special feel to it. I think it made Mariko happy that he requested a home-made meal. ☺
