Omaha Steaks Bacon-wrapped Filet Mignon

The other night for dinner we ate our bacon-wrapped filet mignon steaks which we bought from Omaha Steaks. I cooked them on a cast-iron skillet over medium-high heat, for about 6 minutes on one side, then 5 minutes on the other, and finishing up with a couple minutes on the edges to make sure the bacon was cooked. The internal temperature (checked with an instant-read meat thermometer) read about 130 when I took them off the heat, and they were a nice medium rare when we cut into them.

Being filet-mignon meant the steaks were very tender and anything wrapped with bacon is going to be extra-special. We added a pat of butter on each filet (because why not?) and the juicy steaks did not disappoint – we were all satisfied!

We rounded out the meal with a spinach salad and homemade fries, which were great compliments to the steaks. Steak Frites – so good!

This was the last meal that we cooked from the special order we received from Omaha Steaks. I have to say, these were the best of the bunch, without a doubt.

Burger Time

こなばんは。How’s it going?

So a couple weeks ago we got a special deal on some Omaha Steaks items. We’ve never bought anything from the company before, so this was a new experience for us. I was surprised that they offer more items than just steaks, for instance, we ordered fish stuffed with scallops and crab, chicken fried steaks, cheesy baked potatoes, and Signature Burgers. Plus we got filet mignon. 😊

But tonight we had the Signature Burgers, which came in vacuum-sealed packages and sized perfectly for an average-sized bun. We pan-fried them and they came out juicy and plump. These aren’t too thin, nor too thick, and fried over high-heat, a delicious crust formed. They were delicious! 🍔

Sushi Feast

This evening we celebrated Bay’s recital performance by going out to eat at his favorite restaurant, Komé Sushi Kitchen. The recital was actually last week, but our schedule was so full that we had to postpone the dinner until tonight. Anyways, we feasted on many of the dishes we always get, such as kaki-furai (fried oysters), ebi-furai (fried shrimp), camembert tempura, a few of the kids’ favorite sushi rolls, and a nice variety of nigiri.

But we did try a few new things. Yesterday, the Komé chefs broke down a whole tuna from Japan, so we enjoyed some of the sashimi from that, and it was the first time for me to try the duck breast and foie gras sushi. It was amazing! We also got the kani cream korokke (creamy crab croquette) which was delicious.

The Old Way (Cooking Rice on the Stove-Top)

こんばんは。How’s it going?

Tonight I made rice using our old ceramic cooker. I haven’t used it in a long time which is a shame because it makes really good rice. For some reason, we’ve been using our modern electronic cooker lately. But tonight Mariko was using it to ferment something (who knows what) so I needed to use the ceramic pot.

Basically, you add your rice, wash it as usual, then fill with the correct amount of water. I normally measure it the Hawaiian way by filling it over the rice and up to one fingertip digit, but Mariko said it would be too much and to just use the markers on the side of the pot. So I did that, but actually, it was a little dry. Next time it will be back to the Hawaiian method. 😆

Anyways, once you have the water in there, cover it with the inner and outer lids, then put it over medium heat. Once it starts boiling and steam is shooting out of the venting hole, turn the fire down all the way and cook for 12 minutes. Once that is done, turn off the fire and let rest for 13 more minutes. After the timer goes off, open it up, fluff up the rice with your shamoji (rice spoon), then replace just the outer lid, and it’s ready to go! 🍚
