We put together a new restaurant-grade kitchen table, and now the baking setup is a lot more organized. Besides the two mixers and bread-maker on top, we have a new oven as well. It’s a Breville Convection and Air Fry Smart Oven, and it’s fantastic so far. I baked a Jamaican pattie in it, and it turned out great! I hope we get many years out of it. 😊

This delicious beef curry was made (by Mariko) with leftovers from our Thanksgiving meal. No, it’s not made of leftover turkey, but from the leftover pot roast we served alongside the turkey. Since the pot roast had carrots and potatoes, it was perfect to re-purpose as a curry. Add a couple of soft-boiled eggs, and you have a perfect meal. 😊🍛

Two new additions to my camping kit are the Opinel No. 8 knife and the Snow Peak titanium spork. They are my part of the food section of my kit, but the knife also does double-duty as just a general use item (cutting open a lot of boxes lately!).
I really like these two pieces because the designs and functions are so simple. But what’s interesting is that although they both “spark joy” for me, they are on different ends of the spectrum in a few areas. For instance, the Opinel knife is a classic with lots of history, constructed of steel and wood, is made in France, and is not the most advanced in terms of design/materials. The Snow Peak spork is ultra-modern, constructed from single piece of titanium, is made in Japan, and one of the most advanced in terms of design/materials. They are both beautiful items, though. And green! 💚 I love both of them. It’s a lot of fun to build out my camping gear when there are such cool items available.

We got a new Christmas tree this year! It’s a 6′ tree to replace our 7.5′ monstrosity. I like the smaller size since it is easy to set up and store. And it was another win-win because we sold the old tree to a couple who needed one.
Oh, as you can see from the photo, the new tree is “cat-approved”! 😺
