Dry Curry

I’ve come to realize that curry is one of my favorite types of food. I love Japanese curry, Thai curry, Indian curry – pretty much every version I’ve tried. I honestly can’t remember ever having a curry I didn’t like. Tonight we had a dry curry, which brought back memories of a dish my mom used to make called “curry hamburger.” It was basically ground beef and vegetables cooked in a curry sauce, and it also had that dry-style consistency. Such a comforting and nostalgic meal!

Steamed Pork and Cabbage

Mariko made some delicious pork and cabbage balls and steamed them just right. With bowls of rice and miso soup on the side, it turned into a nice and simple meal that everyone enjoyed.

Bibimbap

Bibimbap is a Korean mixed rice bowl, and I always think the colors look so beautiful. That said, I actually think the “before” photo – before everything gets mixed together – looks even better. You can see it below!

White Pass Railway

Today’s shore excursion was a ride on the White Pass Railway in Skagway. Even though the weather was misty and rainy, the journey through the mountains was still incredible. I was blown away by how the railway was built along the sides of such rugged terrain. It’s hard to imagine the amount of effort and determination it took to complete.

After the train ride and a quick stop in the touristy part of town, we made our way back to the ship and continued on. I loved taking in the stunning Alaskan scenery and scanning the landscape for whales and bears with the binoculars. It was such a fun way to pass the time.

One thing I really enjoy about cruising is the nonstop food. I couldn’t resist going for a classic burger and fries. Sometimes that’s exactly what hits the spot.

Chicken on the Grill

I grilled a batch of chicken thighs for a dinner party this evening. The recipe is similar to char siu pork and has that distinctive five-spice flavor. It is always a favorite and so easy to make. Absolutely delicious!

Sushi at Home

Sushi at home is so much fun! I especially enjoy hamachi and hotate, and there was plenty to go around tonight. I’m usually not a big fan of maguro, but it was surprisingly tasty this time. The salmon is always delicious, as usual. Honestly, I could eat sushi like this every night!
