Yummmm… Chicken Tikka Masala is a favorite at our house. And the homemade naan is so good! The problem is that there aren’t much in the way of leftovers because we all have seconds (and sometimes thirds). 😆

I’ve been working from home for almost two weeks now, and it’s been going pretty smoothly. Being with the family 24/7 has not been difficult, since we all are busy with our individual activities. Bay’s architecture classes keep him working into the evening, Mariko is busy baking, I’m working in our home office room, and Koa is practicing his music and keeping up with his schoolwork (although classes haven’t started for him yet). Our breakfast and lunches are kind of on an as-needed basis, with each of us choosing what to eat, but dinner time we’ll all eat together, just as we always have (before Bay left for college). It’s nice to have all of us at the dinner table! ❤️

Some Good News

A couple of weeks ago I visited my eye doctor for my yearly check-up and prescription update, and I took a new test which was meant to identify the signs of Age-related Macular Degeneration (AMD). Well, I failed the test, and coupled with some of the imaging of my eyes, raised some concerns that I was developing AMD. It’s not an uncommon condition, but it is not seen in someone my age very often.

So, today we took some more tests and… my eyes passed the test with flying colors! Whew! There’s no sign of AMD at this point. I’m so relieved… the uncertainty was weighing on me a bit for these two weeks, and now that weight is lifted.

And how fortunate that tonight we planned to meet our good friends for beer and pizza! They didn’t know about my AMD concern, but inside I was celebrating. 😊

Marathon Guests

こんばんは。How’s it going?

Tonight some friends came over for dinner. Two of them ran the Austin Marathon in the morning, and they were very hungry, so they brought over a lot of food! It was a combination of Chinese dishes and Korean fried chicken, and most of it was really spicy, which I loved! They know I love the spicy fish from Asia Market, so they made sure to order it, and I would have been satisfied with just that and rice, but all the other food was wonderful as well. And the Korean chicken was on fire! Yummy.

Speaking of the Austin Marathon, I’ve always wanted to run it, but the cost always turned me away. Well, I finally bit the bullet and signed up for the 2021 marathon! It turns out that it costs $99 right now, which is less than what I was expecting. Mariko told me that the price goes up later in the year, and those prices were what I looking at before. Anyways, I guess it’s time to start running more. I’m pumped!

Valentines Fondue

Tonight we enjoyed our yearly fondue! It was delicious, but we didn’t have the chocolate fondue for dessert. Just the cheese fondue main course, which is fine with me since I’m not a huge fan of sweets. Because we were pretty busy this year, our dinner table wasn’t fancy, but the food was delicious as always. 😊❤️

Tonight it’s just Koa and I so I made cheeseburgers for us (his request). Excuse the crude photo, but whatever. The burgers were excellent! I added a bit of Japanese Worcestershire sauce and Dijon mustard to the beef before making the patties. Juicy, tangy, and yummy. Hard to beat a good burger!
