We went out tonight for some Tex-Mex at Mama Betty’s. 🍽️ I ordered the Plato Cocinero — beef enchiladas topped with tender beef fajita strips and a sunny side up egg. Really good. We started with queso flameado, which was a great way to kick things off. Not the healthiest meal — everything was a little salty and greasy — but it’s a treat we don’t indulge in very often, and it hit the spot.
This evening, we hosted a dinner for a group of six, and fajitas turned out to be the ideal choice! We opted for Mi Tienda skirt steak fajitas from HEB, and I grilled them on the barbecue. The grilling process significantly enhanced the flavor of the meat. Despite my initial hesitation due to the cold weather, Mariko easily persuaded me (didn’t take much) to fire up the grill. I highly recommend the Mi Tienda Line if you have an HEB nearby. The meal was absolutely delicious!
Hello! A new location of the local Austin Tex-Mex restaurant Chuy’s opened near our house, so we had an early dinner there today. I had the gigantic “Big As Yo’ Face” burrito in the photo above. It was so filling and delicious, but I am so stuffed that I will need to do some fasting this coming week! 😆
Chuy’s is a fun restaurant, with a lot of kitschy decor on the walls and ceilings. And there’s also a huge Elvis Presley theme going on! I’d say Chuy’s doesn’t have the fanciest food, but it’s consistently good and has a great atmosphere. If you ever have the chance to dine at one, I recommend it! Just be prepared to wait a bit for a table. 😝
