We went out tonight for some Tex-Mex at Mama Betty’s. 🍽️ I ordered the Plato Cocinero — beef enchiladas topped with tender beef fajita strips and a sunny side up egg. Really good. We started with queso flameado, which was a great way to kick things off. Not the healthiest meal — everything was a little salty and greasy — but it’s a treat we don’t indulge in very often, and it hit the spot.
While out on my run today, I spotted these roses in someone’s front garden and just had to stop for a photo. 🌹 They are so pretty. Whoever tends that garden is doing a wonderful job.
I went to the theater tonight with a friend to see The Super Mario Galaxy Movie, and it was a blast. 🍄 Lots of action, genuinely funny moments, and some fun cameos from other Nintendo characters. Loved it!
A couple of friends told me to grab the sweet corn Turtle Chips from H-Mart, so I finally did. Good call, friends. 🌽 The shape gives them this really satisfying crunch, and the flavor is spot-on – sweet corn, a little creamy, like corn soup in chip form. Excellent!
Kiki and I headed out for an evening ride to catch some cool air and a sunset. 🌅 The timing worked out perfectly. I really do love these quick rides close to home.
Mariko made a turmeric curry potato salad to go with gyoza tonight, and it was so good. 😋 Such a colorful and delicious combo!
Race day at Circuit of the Americas! I was rooting for Japanese racer, Ai Ogura, and he was working his way up to 4th before mechanical issues took him out. Tough break. 😔
But he did set the MotoGP lap record at Circuit of the Americas with a time of 2:02.037, so the day wasn’t a total loss. Hopefully he finds his way onto the podium before the season’s out. That would be pretty cool to see!
